 Post subject: Lorrie Y's Stuffed Green Peppers

Lorrie Y's Stuffed Peppers:

6 Green Peppers Uncooked
1 lb of chopmeat (you can use ground turkey if needed)
1 Egg
1 cup cooked rice
1 medium onion chopped
1 Tablespoon chopped garlic (optional, but garlic rules!)
3/4 teaspoon salt
3/4 black pepper
1 tablespoon parsley
1 Can tomato soup thinned with 3 cups water

1st: cut tops off peppers and remove seeds & inside "ribs"
2nd: Mix chopmeat with cooked rice/egg/salt/pepper/parsley/chopped garlic etc.
3rd: Spoon the above mixture in to each empty "green pepper cup"
4th: Open canned tomato soup and mix it with at least 3 cans of water
and pour it into a baking dish
5th: Place the filled green pepper cups into the baking dish that you have filled with the tomato soup mixture so each pepper is surrounded by soup.
6th: Cover baking dish with foil!
7th: Bake at 375 degrees for 30 minutes...uncover and bake about 15-20 minutes longer until tops begin to brown nicely and the outside pepper shell is pretty well cooked (it's ok if pepper is a bit "crunchy")
8th: Serve with fresh rye bread/Italian Bread etc.......

You can reheat left overs in the Microwave!
