Here's a recipe I kinda put together and think it's pretty tasty.
3 cups of cooked rice
1 green pepper (cut into 1/4 pieces)
1 medium onion (chopped)
1 pkg. Kielbasa (or you can use other)
parsley
salt & pepper (to taste)
1 tbsp. of garlic (I used the jar minced type)
5-10 shots of hot sauce (I used Frank's)
1 can of black beans (drained and rinsed)
1 can of corn (drained)
1 can of tomato paste (medium sized can)
butter or margarine
water
In a large sized sauce pan melt a pad or two of butter/margarine and add in the onions and peppers and slightly cook until the onions are slightly translucent.
Then add in the Kielbasa and cook until done. Being careful not to burn the onions and peppers.
Then add in the parsley, garlic, salt & pepper, hot sauce and stir around.
Then add in the tomato sauce and stir it around. Add a slight bit of water until the tomato paste is a little soupy but thick.
Then add in the rice, black beans, corn and cook until the everything is warmed thru. If it's looking a little thick then feel free to add some more water to it. Remember you can add but you can't take any away. So go easy with the water steps..
