 Post subject: Lorrie Y's Chili (use your crock pot--it's easier)

LORRIE Y'S CHILI (use a crock pot, it's sooo easy this way!)

1 lb ground beef & 1 lb of ground pork
1/2 lb of cooked bacon (save the drippings/bacon grease!)
1 Green Pepper
1 Medium Onion
2 Large Cans Red Kidney Beans (drained)
1 Can Crushed Tomato
1 Can Tomato Puree
1 Can Diced Tomato
1 Tablespoon Chili Powder
1 4 oz Can of chopped/diced Green Chili (drained)
1 Teaspoon minced Garlic
1 or 1/2 Teaspoon of Cayene Powder (this is up to you)
3/4 Teaspoon black Pepper
1/2 Teaspoon Salt
3/4 to 1 Teaspoon Cumin (more if you like the heat)
1 Package of Mexican Cheese for topping & Sour Cream is option

Okay boys here you go:

1st: Cook your 1/2 lb bacon until it's brown (not burned but not rubbery either) SAVE THE BACON GREASE
Remove the bacon and place it on the side!
2nd: Diced the onion and green pepper and begin to cook them in the left over bacon grease! (that's right boys-mmm)
3rd: Using slotted spoon remove the cooked onion green pepper
4th: Add the beef/pork mixture to the remaining bacon drippings and cook the meat until the pink it out of it.
5th: Drain the kindey beans (the starchy stuff is awful)
6h: Open all three cans of Tomato & pour them into crock pot
7th: Add all the spices to the tomato base in the crock pot-stir to mix
8th: Add the onion/ green peppers/ Chili Peppers to the crock pot
9th: Add the Red Kidney Beans
10th: Add the cooked Ground Bee f& Ground pork, cumble the cooked bacon and add that to the crock pot as well.
10th: Mix all the ingredient together
11th Set your Crock Pot on Low and let it cook for a few hours, then switch it to high about an hour before eating.

OPTIONS: Use all beef instead of beef/pork or use ground turkey if cholesterol is an issue) but I recommend the beef pork
Intensity: You can use more than 1 can of diced chili OR
2 Habenaro diced peppers (belly burner)
2 Ghost Chili Peppers (belly and butt burner)

You can add Mexican Chili & Sour Cream as toppings when you serve it, along with some crusty bread or corn muffins.

Yes, there is nothing quite like having a good chili simmering away in the crock pot all weekend ;)

Thank you all for your feed back as you are Welcome! Please try the chili recipe BUT let me know if you liked it, ok? I am 5 feet tall, 118 lbs of cooking dynamite & I LOVE to cook and share meals and some (not all) of my recipes. All my friends love my chili, and this is the first time I am actually sharing this recipe so you know you are valued friends.
